With the addition of the butter, the drink will tend to coagulate leading to the separation of the curd releasing the “whey proteins”.
The rennet itself will filter the drink by attracting the heavier particles including the colour particles.
Thanks to butter wash, the drink loses most of its colouring substances and adds soft, velvety sensations
First pour all ingredients into a separate rennet container.
Then filter the drink through a V60-style paper filter, taking care to pour it into a chilled mixing glass and stir.
When the temperature and dilution have been reached, pour the ingredients into a chilled old fashioned glass.
Serve with a giant cube and garnish
